Pho Bo(beef noodle soup) is a very time consuming and sophisticated dish which requires a dozen or so different spices and herbs. And an eatery that gets the combination of cow bones, cinnamon, coriander seed, star anise, ginger and other ingredients just right.
We had just visited the famous Notre Dame Cathedral and it was time for breakfast and we decided to look for a restaurant that serves Pho Bo. As we were walking back just a short distance away from the Cathedral we came across this restaurant and without hesitation we went in and sat down and ordered our Pho Bo.
The restaurant has a family atmosphere, and even features a resident cat that walks around looking for scraps. The family members are attentive while the cooks are busy at the big pots outside. None of the staff spoke English and the customers are all local people.
I have not tasted Pho Bo before anywhere. The beef, the fresh herbs, the broth, the noodles, the texture, the combination of spices and sauces are superb.
